This tasty mung dal is made from half peeled mung beans and cooks in just 12 - 15 minutes without soaking. It cooks until soft and slightly creamy, but does not fall apart and retains a pleasantly fine bite. Mung dal can be prepared and flavoured in many different ways, e.g. with ghee, coconut milk and various spices. In Ayurvedic cuisine, it is served as a delicately sweet-tasting side dish with rice and vegetables and is suitable for all doshas. Mung dal is quick to cook and rich in protein and fibre.
Preparation
No soaking necessary. Wash mung dal before cooking. Bring 1 cup of dal to the boil once with about 2.5 cups of fresh water and simmer for 12-15 minutes. Only add salt after cooking.
